Sole and flounder fillets vary in shape, depending on the species. For example, gray sole, like rex sole, offers long, slender fillets, while yellowtail flounder and rock sole yield thicker, broader fillets. Lemon sole, fluke and dab also have thick fillets, but not as thick as the average cod fillet' Raw flesh of Dover, English, petrale, rex or rock sole ranges from pearly to pinkish white to snow white. Gray sole, lemon sole, yellowtail flounder, fluke and dab range from creamy white to milky or bright white. The meat of yellowfin sole is a pale tan to white, with a yellowish cast on the skin side of the fillet, which lightens upon thawing and turns pure white when cooked.
