Closely related to cod, hoki is a long thin, bluish-silver fish found primarily off the continental shelf of New Zealand. Smaller stocks are located off southern Australia. Japanese, Russian and Korean vessels also fish Hoki in these regions. Hoki are taken by trawlers operating in depths 0 to 2,500 ft. These vessels typically process and freeze the catch at sea. The United States and Japan dominate the world market for frozen hoki fillets, while China and Thailand are strong bidders for whole-frozen and frozen H&G products. Most fresh hoki fillets are marketed in New Zealand and Australia, though supplies are available for export. Markets for this lean, relatively inexpensive, white-fleshed fish were undeveloped until the mid-1980's but have expanded eight-fold since then, primarily in the foodservice sector. Hoki is also offered in retail outlets - especially club stores -as a frozen or value-added product.
