Scientific Name:  Coryphaena hippurus
Mahimahi (the Hawaiian name for this species) is found in nearly all warmwater seas, including nearshore waters of Hawaii and Florida, and from Southern California through Latin America. Japan and Taiwan account for 80 percent of the world's mahimahi harvest, which averages 30,000 to 40,000 tons annually. Much of the U.S. supply comes from South America. Fishermen catch mahi with troll lines, longlines and pole and line in directed fisheries or as bycatch in tuna and swordfish fisheries. Though mahimahi is not currently farmed in commercial quantities, aquaculture experiments are planned or underway in Australia, Hawaii, Barbados and other locales. Most mahimahi is supplied to the foodservice market though fresh and frozen product (the latter often vacuum packed) is available at retail. High-volume, frozen imports from Taiwan, Japan and Latin America supply mid-scale restaurants. Typically, the two market niches - fresh and frozen - do not overlap.
