Orange roughy stocks are irregularly distributed around the world, though most are found off New Zealand, where considerable populations were discovered in the late 1970s. A bright-orange, perch-like fish, roughy is taken by trawlers from depths that can exceed 3,000 ft. The United States dominates the orange roughy market, importing about 20 million lb of frozen fillets per year. The next biggest market is China, whose 2 million lb of H&G would translate to about 700,000 lb of fillets each year. Japan imports 250,000 lb of frozen fillets annually.
