Chum is the world's second-most important salmon species by volume, behind pinks. They are found from Washington north to Alaska and across the Bering Sea to Russia, then south to southern Japan and North Korea. All chums are caught in the wild, and nearly all are taken with gillnets or purse seines. Fresh and frozen chums are gaining popularity. Lots of chum also wind up in cans. Despite record harvests, world market share for Alaska salmon has dropped 25 percent, due to a proliferation of salmon farms in other countries.
