Of all Pacific salmon, coho looks most like Atlantic salmon. The coho's lower jaw is white-gummed - one means of distinguishing it from a chinook. In the wild, it is found on both sides of the Pacific, from Southern California to Alaska and from Russia to Japan. Coho is primarily taken by gillnets and seines, though a lot is taken by trolling. In fact, coho is the backbone of Alaska's salmon troll fishery. Cohos is also farmed in floating pens in Chile and Japan. Japan led production through the 1980s and early 1990s but fell far behind Chile's output in following years. Production of farmed Chilean coho is at a record high - about 60,000 tons per year. Alaska dominates global harvests of wild coho salmon, contributing about two-thirds of the 30,000-ton annual supply. Canada catches most of the rest.
